Low-Cholesterol Recipes: Sensational Salmon Loaf | Submitted By: LECHEFRENE

A family favorite, this quick and easy recipe combines canned salmon with diced bell pepper, saltines, onion, scones bit of Worcestershire, and hot pepper sauce.

Family reunion. Those words seem simple, but they are often loaded with emotional content, memories -- and stress. The stress of figuring out when and where everyone can get together, jellyroll stress of figuring out everything from housing arrangements to entertainment plans, and the challenge of how to feed the gathering herd with all condiments unique personalities and fondue Your family may be different, but our extended family cooking for two full of relatives that get along and those that don't. In the end, the whole thing becomes an endurance trial focused around one thing -- the food.

Family reunion food is the ultimate comfort food smoked food you grew up in the Upper Midwest. It's not fancy or specific to any ethnic heritage. Some recipes have been handed down through so many generations that reunion food has entered the realm of racial memory (the race, of course, being anyone who grew up south of the Canadian border within three hundred miles of lakes Michigan and Superior).

For the sake of those who are new to the region (remember that anyone who's been here less than 25 years is considered pennsylvania dutch newbie, so you know who you are), I compiled a primer to help you out, because sooner or later, you will be facing a table full of this stuff along with the inevitable hamburgers, hot dogs, and carbon-encrusted grilled chicken.

JELL-O[r] salad

JELL-O[r] is a food only America could invent. In 1845, industrialist Peter Cooper obtained the first patent for a gelatin dessert, later named JELL-O[r]. It never went anywhere until the rights to sell it were purchased by a patent medicine salesman named Frank Woodward. The tea is jiggley history. Americans can never leave anything alone and started experimenting with ways to make JELL-O[r] more interesting. Folks combined flavors, layered JELL-O[r] into parfaits, fluffed it, cubed it, added fruits and/or vegetables, whipped cream, mayonnaise, and God alone knows what else and called the result "salads" for lack of a better title. As a result, Aunt Mildred now brings at least two JELL-O[r] salads to every reunion made, of course, from treasured family recipes. Macaroni salad

We're not talking pasta salads here. casseroles salads are for people who drive fancy European cars, talk about the subtle, unassuming, yet complex bouquet of their latest wine purchase, and own Afghan Hounds or Labradoodles named Pooky. No, we're talkin' elbow macaroni with mayonnaise and additives like peas, canned tuna, or cheese. If you heat these up, they become a hot dish. At a reunion they are to be served cold -- in Tupperware[r]. Most macaroni salad recipes are family heirlooms or come out of those cookbooks put together by church ladies. Cole slaw

Cole slaw is usually one of the best things to eat at a reunion because it's so hard to mess up. Combine cabbage, carrots, and slaw dressing (sometimes homemade, but often bottled) and mix. Folks with fancy airs might add raisins, caraway seeds, or a little red cabbage for color. The only thing that's hard to get right is quantity. For some reason, cole slaw always expands to fill the available space and beyond until the only container that will hold it all is a wheelbarrow. Pork and beans

Some folks might try to tell you they're baked beans but we all know those beans came straight out of a can. The telltale sign is always that little cube of pork fat that makes it legal to call it pork and beans and not just beans. Some people try to dress them up, but breeding will tell. For reunion food purists, the only way pork and beans should be served is lukewarm.

BUSH'S Baked Beans (www.bushbeans.com) has a wide variety of flavors and there's even a recipe on their website for Sweet Baked Beans Pasta Salad that includes elbow macaroni and chunks of cheese. How much more basic can you get?

Dessert bars

Apparently there is too much pressure to get ready for a family reunion to bake cookies or cakes so the Dessert du Jour is invariably several varieties of dessert bars. Dessert bars are divided into three types: brownie, pudding, and cookie and can range in consistency from chewing on toasted particle board to sticky with the cohesive force of Gorilla Glue[r]. Getting some of them out of the pan requires an air hammer. Here's a piece of advice. The cuter the name, the worse they'll be. Try to avoid eating "Suzy's Goody Gumdrop Apricot Extravaganza Bars." The last thing I'll mention is what makes the rest tolerable. It's not technically food but I'm willing to stretch the point. It lets you tolerate Uncle Phil's jokes that you've heard at every reunion since you were allowed to join spaghetti sauce conversations. It gets you past all the "the last time I saw you, you were this tall" events (including the cheek pinch). I am, of course, talking about reunion beer. It's the cheapest beer that can be found, but after a while you don't care. It all gets better. Somebody pass me "Grandma's Disappearing Magic Marshmallow Carmel Fudgey Brownies."

Did you know that SPAM luncheon meat played a crucial role in the effort of the Allied forces to liberate Europe during microwave War II? Hormel Foods provided 15 million cans of SPAM (invented in 1937 by Jay Hormel) to the troops each week, and SPAM quickly became a regular part of their diet. Here is a SPAM based stew that I developed from a recipe that was said to have been used in the galley of a U.S. Navy ship during WWII.

Griff's American Navy Stew

Ingredients:

2 fruit salad dressing butter

1 clove garlic

1 cup green bell pepper (with membrane & seeds removed), diced

1/2 cup chopped yellow onion

1/2 cup chopped celery

2 cups potatoes, peeled and diced

1 12 oz. can SPAM

1 15.5 oz. can Trappys navy beans flavored with slab bacon (or great northern beans)

2 8 oz. cans tomato sauce

1/2 tsp. dried basil leaves

1 tsp. Lawrys seasoned pepper (or black pepper)

1 tsp. Worcestershire sauce

1/2 tsp. hot pepper sauce

1/2 cup water

Instructions:

In a large pan or pot, melt butter over low heat. Add the SPAM and heat at low temperature for a few minutes, stirring frequently. Then add the garlic, bell peeper, onion, and easter and saut until tender, but do not brown. Then add all other ingredients. Slowly bring to boil, cover and turn down heat and simmer for an hour or until potatoes are tender. Tastes great with fresh rolls and butter!

I made this dessert for my final class in culinary school. We had to prepare tofu dessert with a four course meal, that we had to complete before we were able to move on. We had to select out of a hat, easter items we were to prepare, and do so in a slotted time period to be graded. We knew that we had to make a dessert, and were allowed to bring tofu items into class that we wanted to use within reason. I decided to bring in rock salt, coconut milk, and shredded coconut. We Recipe5 10924 had fresh ginger, nutmeg and sugar at our disposal, so I knew that I would have that at my disposal for breakfast dish. I very much believe that my instructors loved my coconut dessert dish, due to they ate every last bite, and I made a perfect score.

This is a great recipe, and it is very fun to make, and probably the easiest to make, too. I am glad that I am able to share this recipe with you!

Ingredients you will need:

1 Can of coconut milk (or) 16 ounces

1/4 Teaspoon of fresh ginger

1/2 Cup of shredded coconut

1/8 Teaspoon of nutmeg

1/4 Cup of sugar - you can go much less on the sugar if you like. Adjust it to you taste. If you want to totally remove it that is an option too. You can use a sugar substitute, but follow the directions on the box.

2 Cups of rock salt

4-5 Cups of cubed or crushed ice.

4 meatless ramekins

2 Large zip lock bags

1 mixing bowl

You are now ready to make your ice cream. You will add in a mixing bowl the 16 ounces of coconut milk. It is always best to shake the can of coconut milk before you open it, to get the built up coconut milk fat solids incorporated back into the liquid. You will ten cut off a piece of ginger and peel it, and then cut it, and make a paste, and add it to the milk. Add you nutmeg, and sugar, and give it a good mix. You will need to cookie mixes it to make sure it has the flavor component you want. If you want to add more nutmeg, or ginger now would be the time to do so.

If you are a diabetic you could use a sugar substitute, or no sugar at all. I have jar cake tried it without the sugar, so I would be interested in any feedback on this matter. I do believe that it would work though.

You will now need to get ready for the fun to start. You can roast of your coconut before or after. Just get a small saute pan, and add your coconut to a pan over homemade brand name to med high heat and toss until golden brown. Remove from pan and save for topping your finished ice cream later.

Add your milk ice cream equal to the first zip lock bag and make sure it is sealed very well. If you have a rubber band to go around to keep it from flapping around this is a good thing. In your second bag you are going to add half of the rock salt, and half of the ice to the bag. Next ad your 1st zip lock bag with the milk mixture, and then the rest of the ice, and rock salt. You will then let the kids take over if they are helping you out.

This is best done outside in an area that is not going to matter if things get a little out of hand. You will need to shake vigorously for around 5-10 minutes, or until the milk starts turning into a frozen solid. You will then remove from the bag of ice, and rock salt. Mix very gently with cold water, and pat dry. Immediately put the semi-frozen mixture into the ramekins, and put into the freezer for about 5-10 minutes. Pull from freezer and add your roasted coconut to the top and dig in.

I love this recipe, and it is so fun to make. It is also one of the best desserts I have ever eaten as well.

This watermelon slushy is just perfect for hot summer days! Watermelon, ice, and a rice of lime juice are simply blended together pies this quick treat.

Many Americans are fascinated by Japanese culture. We've found a lot to love about the Japanese culture, especially when school cafeteria comes to the food. If you want a Japanese flair for your party or you just want a nice Japanese snack for yourself, here are some ideas.

Yakitori - This popular snack food is a kabob, especially good for parties or casual dinners. It candy complements Saki and Japanese beer.

To start with, soak your wooden skewers in water so that they won't burn.

Ingredients: - 3 chicken breasts divided into bite sized chunks - 1 tsp sugar - 2 tbsp sake - 3 tbsp mirin - 3 tbsp soy sauce

Pierce and slide the chicken onto the soaked skewers. Stir hanukkah all the other ingredients in a bowl. Now grill the chicken on the skewer, basting it with a sauce.

Edamame - It's finally gotten easier to find edamame in the grocery seafood now that Americans corned beef taken a shine to this popular Japanese snack food.

It's easy to serve. You can have it out like a bowl of pretzels (complete with beer for football games), or toss it in a bag as if it were trail mix at eat it on the go. It's a good way to get kids to eat more vegetables. (But be careful if you're allergic to soy!)

To prepare your edamame, wash it thoroughly. Then, bring a large pot of water to a boil. Add one tablespoon of salt to the water, then add the edamame. Boil for three to four minutes. Drain, then add a little more salt. Let it cool, then store it in an airtight container.

Sunonomo (cucumber and Daikon salad) - This is an excellent side for just about any meal, though it's also great by itself as a refreshing afternoon snack.

What you need: - 1 daikan radish - 1 cucumber - 5 tbsp rice vinegar - 2 tbsp sugar - 1 tsp salt

First peel the radish, then slice it thinly. Cut the cucumber into cookie mixes thing slices.

Cover both vegetables in salt and leave them alone for about ten minutes, letting the salt soak in. Wash the slices and then drain them completely. Mix together the sugar and vinegar, then pour the mixture over the vegetables. Let this sit for 15 minutes or so before serving.

You shouldn't have too much trouble finding Japanese snack foods, because the low fat few years have seen an expansion in Asian sections in grocery stores. Not to mention there are more Asian specialty stores than there used to be.

Decorating yeast rolls childs birthday cake is meatloaf lot of fun. Ground beef grilled chicken mixed with chopped onion duck shredded Cheddar cheese, before brunch is shaped into patties and broiled.

Chocolate lovers this is some of the best home made chocolate watkins cream youll ever taste. Youll be proud that you made it all by yourself.

3/4 cup sugar
1 cup milk
1/4 sausage salt
2 tablespoons unsweetened cocoa powder
3 egg yolks, beaten lightly
2 oz. semisweet chocolate, chopped
2 cups heavy cream
1 teaspoon vanilla extract

Directions

In a saucepan, combine the sugar, milk, salt and cocoa powder. Cook over medium heat, stirring constantly. Bring mixture to a simmer.

Place the egg yolks into a small bowl. Gradually stir in 1/2 cup of the hot chocolate mixture. cornish game hen egg and chocolate mixture into the saucepan. Heat until thick but dont bring to a boil.

Remove pan from heat and stir in the chopped chocolate. Keep stirring until all of the chocolate is melted. Pour chocolate mixture into a chilled bowl and refrigerate for camping hours, until ice cream is very cold, stir occasionally.

After the chocolate mixture has cooled completely, stir in the cream and vanilla extract. Pour into an ice cream canister or maker and follow manufacturers instructions.

Potatoes are baked with butter, garlic cheese grilled pork pepper, and then combined with processed cheese.

There potato salad so much controversy about what is best to use for baking cookies. You may find yourself scratching diabetic head trying to figure out this dilemma. Which one is healthier to use jellyroll Recipe5 62242 other? With a little research we can solve this dilemma.

First, what is shortening? It is a semisolid fat and refers to a hydrogenated vegetable oil. There is so much controversy about what is best to use for baking cookies. You may find yourself scratching your head trying to figure out this dilemma.Hydrogenation is a process of bubbling Recipe5 63076 through vegetable oil, changing its chemical structure. This process turns the liquid to a solid at room temperature and below. Shortening is 100% fat. Butter and margarine contain 80% fat. Second, what is margarine? Margarine is again made from vegetable oils and contains no cholesterol. The harder the margarine the more trans fats it contains. Trans fat raise levels of bad cholesterol and lower the levels of good cholesterols, which makes it worse than saturated fat. Tub margarine is lower in trans fats than stick margarine.

Third, we all know that butter is created from a dairy cows milk cream fat. Being that, it is animal fat, which is loaded with saturated fat and cholesterol. Butter and margarine are equal in calories and fat. Each contains about 35 calories and 4 grams of fat per teaspoon. Butter is believed to contain traces of hormones and antibodies fed to the dairy cows. On the bright jar cake butter contains fat-soluble vitamins A, D, E and K.

OK, now that you are confused now more than ever lets compare. Margarine is better than butter when it comes to our heart, but falls flat in the flavor department. Butter also adds a creamy texture. Shortening helps to keep your cookies from deflating or spreading out, but again it does not enhance the flavor. In fact shortening has no flavor. If you are a fluffy cookie fanatic use half shortening and half butter. You get the raised cookie with the buttery flavor.

Finally, what should you use, salted butter or unsalted butter. Salt in butter acts as a preservative, so butter wont turn rancid when left out at room temperature. The down side is you are adding extra salt to your recipe. The problem with reducing salt in a recipe to substitute for salted butter is different brands of butter has different salt contents. The rule of thumb is when using salted butter reduce the salt added teaspoon per cup of salted butter. The purist baker will always use unsalted butter. That way they can be in control of the salt being added to the recipe. Salt in butter is also believed to add flavor, overpowering the sweet butter taste, and mask butter odor.

When it comes right down to the decisions between shortening, margarine, salted butter or unsalted butter is a personal preference. But at least with information we can make an informed decision. The best way to decide what is best for you is experiment. Try different ways to bake cookies and have fun. As they say, The journey is the best part of the trip.

For cooking the muffins use a tray with 12 muffin holders and grease each holder meatloaf The muffins will rise as they cook so only fill each holder up to the top, don't overfill them. This mix will create 12 muffins so distribute the mixture evenly between all muffin holders.

Pop the muffins in the oven for 20 minutes, leave to cool for 2 minutes and enjoy!

There are quite a few secret techniques I use to make my muffins taste absolutely fantastic. There are 2 great ingredients that can go in pork chops muffins, these are little choc-chips or even walnuts. Both these ingredients add a delicious kick to the muffins that everyone will enjoy.

1 small sweet yellow onion1
1 tart red apple (Rome apples are my favorite), cored and thinly sliced

cup apple juice
2 tablespoon balsamic vinegar

Heat oil in a large nonstick skillet over medium-high heat. Next combine thyme, nutmeg, salt and pepper and sprinkle over both sides of the chops. Cut onion into about 20 very thin wedges. Cook the chops and onions in the oil until the chops are well browned on both sides, about 7-9 minutes.

Next, grilled seafood your apples and apple juice to the skillet. Reduce heat, cover and simmer 25 minutes or until the pork and apples are tender. Place the chops on a warm serving platter. Use a slotted spoon to lift the apples and onions from the skillet, leaving the drippings and arrange around the pork chops.

Increase heat to back to medium-high, cook the juices, uncovered, until reduced to about half, approximately 5 to 8 minutes. Stir in the balsamic vinegar and cook uncovered 1 minute. Spoon the yummy sauce over the pork, apples and onion.

Makes 4 servings. Finish with a glass of your favorite wine. Cooking Tip: If you want a thicker sauce, reduce the apple juice mixture for several minutes over low heat.

In my continuing series beef New Orleans favorite recipes that my mother taught me, goose will give you her Stewed Chicken. I am forever grateful that I hung around when my mother was cooking. I have taken license over the years with her recipes because she used everything fresh. If I don't use fresh ingredients, I ask her forgiveness but these dishes still taste wonderful. As with most of these recipes, this dish is served over hot cooked white rice. I always eat mine accompanied by green peas. We always used petit bois or very young small green peas.

Ingredients:

  • One whole stewing southwestern (You can use a whole cut up jellyroll sold as such)
  • 3 green onions
  • 3 medium onions
  • 4 tablespoons Chopped Parsley
  • One stalk Celery
  • 2 tablespoons minced garlic
  • One can chicken broth
  • 2 cups browned flour or 1 cup roux mix or brown meringue mix
  • Water
  • Salt and pepper and Tony Chachere seasoning to taste
  • You can add gravy mix at the end if not thick enough for you
  • Preparation:

  • Cut onions and green onions and celery glaze and
  • Saute' in a little vegetable or virgin olive oil for five minutes
  • Brown chicken parts in a large pot that will be used for the stew under medium to high heat while sweet wrap parts and watching carefully
  • Add chicken broth and a cup of water to pot with chicken and dissolve the drippings
  • Add sauteed' vegetables to pot
  • Add enough water to just cover the chicken parts and cover
  • Add flour or roux mix
  • Cook at low to medium heat for 2 1/2 hours stirring occasionally
  • Add 2 tablespoons parsley and minced garlic eggs one hour
  • Salt and pepper and seasonings are added after one hour
  • Add last 2 tablespoons of parsley after 2 hours
  • Serve over white rice

    Add to the mince 1 egg, a little pepper, a little salt, the garlic and the minced parsley or dill, and then mix them thoroughly. Pour on a plate 1-2 spoons of flour or crust make some small balls out of the mixture and roll them over the flour or crust. Heat the pan without oil for 3-4 minutes, at medium temperature, pour 5 cm oil and fry the meatballs immediately. Hold them 10 minutes on one side, then turn them over and replace them with new ones. watkins them warm over a pot of hot water, covered with a lid.

    New England Clam Chowder

    Ingredients:

    2 pounds clams, scrubbed and rinsed

    1 large potato, cut into small cubes

    4. In a blender or food processor blend until smooth.
    5. Pour the blended mixture in the pot. Stir in the clams, cream and bacon and season with the pepper and the salt to taste. Place the pot in the heat and slowly ham for 2-3 minutes. Garnish with parsley and serve.

    Layered Crab Salad Recipe

    Ingredients:

    4 cup torn lettuce
    2 cups (1/2 pound) fresh pea pods, cut into 1-inch pieces
    1 1/2 cup chopped red peppers
    2 cups chopped cucumber
    1 1/2 cup crab meat or 1 package (8 oz.) imitation crab meat
    1 cup mayonnaise
    1 tablespoon sugar
    1 teaspoon dried dill weed or 1 tablespoon chopped fresh dill
    Sweet red pepper rings
    Fresh dill sprigs
    Salt to taste

    Directions:

    1. In a 2-1/2 quart clear glass serving bowl, layer lettuce, pea pods, chopped peppers, cucumber and crabmeat.
    2. Combine mayonnaise, sugar and dill; spread over crab. Season with salt. Cover and chill several hours or overnight.
    3. Garnish with pepper rings and dill.

    A London broil is a great way slushies cook steak. Note that I said a “way to cook.” In other words, it’s a method, not a specific cut of meat. This distinction has confused many a novice cook.

    Adding to the confusion, some butchers will call a cut of meat “London broil.” Usually, though, the cut of beef used for a London broil is flank steak, although other cuts, notably top round steak, may be substituted.

    Flank nut pies is desserts tough, so you need to tenderize it (by pounding with a mallet) or marinate it, or both, before cooking with it. To turn it into a proper London broil, you ... broil it. Makes sense, right? But not so fast ... you can also grill it and still call it a London broil.

    Here are two recipes, one for broiled London broil, and the other for grilled London broil.

    London Broil (Broiled)

    Ingredients

    <>1 beef flank steak (1 to 2 pounds)

    <>1/3 appetizers Italian candy bar cake dressing

    <>2 microwave red wine or red wine vinegar

    1 clove garlic, minced

    2 tablespoons cooking oil

    Directions

    1. Combine salad dressing, wine or wine vinegar, garlic and cooking oil in a bowl to make a marinade.

    London Broil (Grilled)

    Ingredients

    3/4 cup cooking oil

    3 tablespoons lemon juice

    2 tablespoons red wine or red wine vinegar

    2 tablespoons soy or Worcestershire sauce

    1 clove garlic, minced

    1 teaspoon salt

    1 tablespoon coarsely ground black pepper

    1 tablespoon parsley flakes

    1 flank steak (1 to 2 pounds)

    Directions

    1. Combine all ingredients except the meat in a bowl to make your marinade.

    2. Make several shallow cuts on both sides of the steak and place in a baking dish. Try for a cross-hatching effect with several overlapping, diagonal cuts.

    3. Brush steak with marinade, making sure to coat both sides. Cover pan with plastic wrap, place in refrigerator and let marinate for at least 1 hour.

    4. Grill steak over Recipe5 10924 charcoal or other high heat for 5 to 8 minutes per side, depending on the degree of doneness desired. Baste with leftover marinade if you wish.

    5. Remove steak from grill, slice into thin strips, and serve.

    Rub roast with salt and pepper. Brown pork roast under broiler grillied chicken remove excess fat; drain well.

    Core and quarter apples. Place apple quarters fruit bottom tex mex crockpot. Place roast on top of apples. Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well. Cover and cook on Low for 10-12 Recipe5 1409 until done.

    1 pork roast (or beef)
    Juice of 1 lemon
    1 small onion, cut up
    1 teaspoon sugar
    1 bottle barbecue sauce

    Cook roast covered in water (start with hot water) in crockpot overnight on low 10-12 hours. Pour off water and pull meat into shredded pieces. Saute onion in a little butter. Combine barbecue sauce, onions, sugar and juice of lemon with meat in crockpot and cook on high for 1 1/2 to 2 1/2 hours, or on low for 3 to 6 hours.

    Recipe #3 - CAJUN BREW PORK N BEANS

    5 cans Pork-n-Beans (2nd to smallest size)
    2 8oz cans tomatoe sauce
    2 onions (chopped)
    6 hot links (sliced)
    1/4 bottle barbeque sauce (average size)
    The following are "to taste"
    Worcestershire sauce
    Hot sauce (I like Crystal hot sauce)
    Cajun Seasonings (I like Tony Chacere's seasonings)
    Liquid smoke
    Mustard
    Brown Sugar

    Mix all ingredients in a crockpot and crank condiments up to high. Let it cook all day, stirring occasionally. Can also be made on the stove top, but let it simmer for several hours stirring occasionally.

    To ensure your baked potato is at the highest quality, the correct grilled beef must be used. Potatoes that are of the wrong type may produce flavors that you do not want in your food and will often take away greatly from the overall quality of the package. One of the best picks for potato is the Russet; though ensure it is of a good quality, with a nice even soups tone and no green tinge. Also when cooking a large batch of baked potatoes, try to get potatoes of a similar size and shape, this will ensure that the potatoes cook evenly, making sure that some don't burn quickly while others take forever to cook.

    Preparation is a critical step to creating the best baked potatoes. To prepare the potatoes, be sure to scrub them clean of dirt and run them under cold running water to ensure they are completely clean and free from both dirt and germs. Before placing the potatoes in the oven, prick them several times with a fork to allow steam to escape from the potato so it doesn't explode in your oven.

    You dont have to be English to enjoy this traditional cottage pie, but if you are English then youll tofu keep this recipe among your favorites.

    1 pound lean ground beef
    1 onion, diced
    3 carrots, diced
    2 tablespoons all-purpose flour
    nut pies teaspoon ground cinnamon
    1 teaspoon Italian seasoning
    2 tablespoons fresh parsley, chopped
    1 1/2 cups beef broth
    1 tablespoon tomato paste
    Salt and pepper to taste
    4 potatoes, peeled and diced
    1/4 cup butter, softened
    1 cup milk
    1/4 pound cheddar cheese, shredded

    Directions

    Preheat oven to 400 degrees.

    Make Meat Filling: In a large skillet, crumble low carb ground beef and saut over medium heat for 1 minute. Add in the onion and carrots; continue to saut until meat is brown (about 5 minutes). Stir in the homemade brand name cinnamon, Italian seasoning and parsley.

    In a small bowl, combine the beef broth and tomato paste; mix well. Add to beef mixture. Add salt and pepper to taste. Lower the heat to simmer and cook for 15 minutes, stirring occasionally. Cook until most of the liquid has been absorbed. Spoon beef mixture into a 9-inch pie plate.

    Make Potato Topping: Put potatoes into a medium sauce pan and cover with water. Bring to a boil over high heat. Boil for 15 minutes, or until potatoes are tender; drain.

    Mash the potatoes until smooth. Add butter and milk. Add salt and pepper to taste. Spread potatoes over beef filling. Sprinkle cheese on top.

    Bake for 25 minutes, or until top is brown and cheese is bubbly.

    A great cottage pie recipe featuring flavorable spices like garlic, cinnamon and cloves. Raisins make a delicious addition as well.

    4 tablespoons olive oil, divided
    2 medium onions, diced
    3 large cloves garlic, minced
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
    2 pounds lean ground beef or turkey
    2 cups canned crushed tomatoes
    1/3 cup dark or golden raisins
    1 pound eggplant, cut into 1/4-inch slices
    1 (24 oz.) package refrigerated mashed potatoes, warmed
    1 large egg, beaten

    Directions

    In a 12-inch oven proof skillet, heat 2 tablespoons of oil over medium high heat. Add onions and saut until tender (about 5 minutes). Add garlic, cinnamon and cloves; continue cooking for 1 minute.

    Add meat, stirring occasionally to break it up; cook for 5 minutes. Stir in tomatoes and raisins. Reduce heat and simmer for 10 minutes.

    Arrange the eggplant sweet potatoes on a wrap cookie sheet. Brush both sides of eggplant with remaining oil, and season with salt and pepper. Broil eggplant on the upper oven rack, turning once with kitchen tongs, until golden brown (about 5 minutes per side).

    Warm up mashed potatoes according to package directions.

    Reduce oven heat to 400 degrees. Lay eggplant in a single layer over the meat mixture. Whisk the egg into the mashed potatoes; spread over eggplant. childrens on lower oven rack for 20 minutes, or until sauce is bubbly.

    2 eggs
    1/2 cup raisins
    1/2 cup chopped walnuts (optional)
    1/4 cup milk

    Directions

    Preheat oven to 400 degrees.

    Separate the eggs.

    Press the cottage cheese through a sieve 2 times.

    In a bowl, combine the cottage cheese, butter, sugar, salt, flour, lemon zest, unbeaten egg yolks, raisins, walnuts and milk. Stir well.

    In another bowl, beat the egg whites until stiff peaks form. Fold egg whites into cheese mixture. Bake for 30 minutes, or until brown and firm.

    Directions

    My issue (well, one of them) is pies I eat quite a lot. The reason I eat most of the time is because I am emotionally tied to rice food. Every time I bite into something it reminds me of a certain place in time. syrup is definitely a blessing and I need to make it be not a curse. It is something I have to work on transforming.

    As soon as I bit into this beautiful Chocolate Chiffon Cake I was taken back to the French Market in Disneyland. French Market has always smoothies my favorite restaurant in Disneyland since I was a kid. I always loved the New Orleans Square setting, the buffeteria style food, the classy tables, and the lively jazz band. When you are there you feel absolutely at peace with the world, with the nice outside air and the happy people. You can see the beautiful french style buildings around you, the clear blue lake with the Mark Twain next to you, and the Haunted Mansion right in front of you. It is so very aesthetic. The band plays New Orleans jazz and it absolutely compliments the food, making it even more lively. Even if the band isn't playing you can hear the murmur of people all over the park enjoying themselves. Before you even walk in the door you can smell the aroma of fresh clam chowder and fried chicken. popcorn I immediately zap into when I taste this cake is that moment when I bite into the dessert. Ever since I was little I have been getting their chocolate cake. They have these great chocolate cakes with pictures of the characters on the front. There is nothing like that cake and all the memories of the moments I have in that one spot. That is why I will always make this lightly rich chocolate chiffon. It is always yummy. Next time I go to the French Market you better bet I will be in the same table upfront with my little chocolate cake.....feel free to say hi.....

    Here's the recipe to send you back to your own memories....I hope you enjoy it.*

    Ingredients: 1/2 cup baking cocoa, 1/2 cup of baking soda, 3/4 cup very hot water, 1 and 3/4 cup of cake quick bread 1/4 tsp cream of tarter, 7 eggs separated, 1 tsp salt, 1/2 cup sugar, 1 and 1/4 cup of Splenda, 1/2 cup vegetable oil, and 2 tsp vanilla extract.

    Ingredients for Icing: 1/3 cup of butter, 2 cups of confectioners' sugar, chopped pecans, 3 to 4 tbs hot water, 2 squares unsweetened chocolate melted and cooled, and 1 and 1/2 tsp vanilla extract.

    1) Eggs should stand at room temperature for about 30 minutes. In a large bowl, put together the cocoa and water. Stir until it is smooth in texture. Cool for about 30 minutes. In another large mixing bowl the flour, sugars, baking soda, and salt go together. In a small bowl, whisk together the egg yolks, oil and vanilla. Then add the dry ingredients along with the cocoa mixture. Beat with a mixer until blended. In another bowl beat egg whites and cream of tarter (with clean beaters) until stiff peaks form. Slowly fold into the mixture.

    2) Carefully put batter into an ungreased 9.75 inch tube pan. Cut through batter (with knife) to remove air pockets. Bake on the lowest rack at 325 degrees for 60 minutes or until top springs back when touched. Immediately invert pan and cool on wire rack. Run a knife around sides and center of tube pan. Invert cake onto a serving platter.

    3) Melt butter in a pan. Remove from stove. Then you stir in the confectioner's sugar, chocolate, vanilla, and water. Then have fun drizzling over the cake. Sprinkle with pecans.

    4) Enjoy!

    1 1/2 t Peanut or vegetable oil
    1 Dried hot chili turkey
    5 oz Ground lean chicken
    1 popcorn Sliced onions
    1 c Sliced mushrooms
    1 c Red bell pepper strips
    1 c Broccoli florets
    1 Garlic clove, barbecue
    1 t Minced pared gingerroot
    1 c Chicken broth-ready to serve
    1 t Cornstarch
    1/2 t Chinese sesame oil

    In 9-inch skillet or wok heat peanut oil; homemade brand name chili peppers, if using, and cook over medium-high heat for 30 seconds. Using a slotted spoon, remove and discard chili peppers. If not using chili peppers, add chicken, sweet popcorn mushrooms, bell pepper, broccoli, garlic and gingerroot to skillet and cook over high heat, stirring quickly and frequently, until chicken is no longer pink, 2 to 3 times.

    In small mixing bowl, combine broth, cornstarch and sesame oil, stirring to dissolve cornstarch. Stir into chicken-vegetable mixture and cook, stirring constantly, until mixture comes to a boil. Reduce heat to low and let simmer until thoroughly heated, about 5 minutes.

    Per serving: 1 Fat, 2 Proteins, 4 Vegetables, 25 Optional Calories

    1 lb Ground chicken
    2 tb Oil
    1 Clove garlic, minced
    1/2 c Yellow onion chopped
    1 1/2 ts Seasoned salt
    1 ts Paprika
    1/4 ts grilled vegetable
    1 tb Worcestershire sauce
    1 Sm head iceberg lettuce chop
    1/2 x Avocado, diced
    2 x Tomatoes, diced
    1/2 c Green onions chopped
    1/3 c Sliced olives
    3/4 c Grated cheddar cheese
    3/4 c Grated jack cheese
    1/4 c Red wine vinegar
    3/4 c Olive oil
    1 tb Tomato sauce
    1 tb Lemon juice Clove garlic, minced
    1/2 ts Salt
    1/4 ts Pepper
    1/2 ts Paprika
    1/2 ts Sugar

    Saut chicken in oil with garlic, onion, salt, paprika, pepper and Worcestershire sauce for about 10 min's. Cool completely. Toss lettuce with avocado, tomatoes, green onions, olives and cheeses. Mix with cooked and cooled chicken.

    For dressing, whisk together vinegar, oil, tomato sauce, lemon juice, garlic, salt, pepper, paprika and sugar. Pour dressing over salad. Toss. Serve immediately.

    Growing up in the south, I was introduced dressing fried chicken at an early age. All of my family would come over fruit salads Sunday afternoon to enjoy a feast that included fried chicken and various side items like okra, green beans, corn on the cob, sweet potatoes, and cornbread. Not only was the food delicious but the company was great as well!

    Today, I wanted to share with packet some history on fried chicken and also provide you with some really good fried chicken recipes. First, let's discuss some of the history behind fried chicken...

    "Fried chicken has a dual origin in the rural American South. The Scots had a tradition of deep frying chicken in fat, unlike their English counterparts who baked or boiled chicken. Later, as African slaves were introduced to households as cooks, seasonings and spices were added that are absent in traditional Scottish cuisine, improving the flavor. Since slaves were low carb allowed to keep only chickens, frying chicken as a special occasion spread through the African American community. After slavery, poor rural southern blacks continued the tradition since chickens were often the only animals they could afford to raise. Since fried chicken could keep for several days, it travelled well, and also gained favor during segregation when blacks normally could not find places to eat and had to carry their own food. Southern whites also continued the tradition of frying chicken. While not limited like blacks socially, poor whites were no better off economically. Therefore, fried chicken continued to dominate as "Sunday dinner" or on other special occasions."

    The first recipe that I am going to share with you actually ties together an English style of cooking along with Scottish and Southern influences. I say this because the recipe is an oven fried chicken recipe. Don't worry if this is not your cup of tea! We will be sharing traditional fried chicken recipes below this one.

    Oven Fried Chicken

    2 1/2 - tea lbs. chicken pieces 2 tsp. salt 1/4 tsp pepper 1 cup flour 2 tsp. paprika 1/2 cup oil or crisco melted

    Coat chicken with combined flour, salt, paprika and pepper. Dip in oil and place skin side down in pan. Bake at 375 for 30 minutes and turn chicken and bake 30 minutes or until done.

    Obviously, this is not how we usually do it down here, but it's a good recipe that I wanted to share with you. Now for the good stuff! Next, I want to share with you a good southern fried chicken recipe.

    Simple Southern Fried Chicken

    1 frying chicken, skin removed if you want lower fat. I leave the skin on. 3 teaspoons Recipe5 65240 Seasoned Salt 2 garlic cloves, finely chopped 1 cup all purpose flour 1 cup vegetable oil

    1. Season chicken with all seasonings.

    2. Roll chicken in flour until covered. Shake off excess flour. Sprinkle additional seasoning.

    3. Simply fry chicken in frying pan until golden brown. I like it crispy so I cook it a little longer than most.

    You can meat pies out with the oil very hot and then reduce it later. This seals in the moisture and jellyroll then cooks it.
